High protein cheesecake

A quick and healthy dessert that you can whip up in the morning or afternoon in 25 minutes and have ready for after dinner.

High protein Cheesecake!

Serves: 2

Prep time: 5 minutes

Cook time: 25 minutes

The easiest dessert to make, that tastes like it’s straight from a cafe! The batch makes two serves and contains over 30g of protein per serve! Hard not to eat both at once… just saying.

Ingredients :

  • 200g low fat cottage cheese

  • 1/2 vanilla YoPro cup (80g)

  • 2 eggs

  • 2 tbsp Vanilla Plant based protein powder

  • 2 tbsp 100% pure maple syrup or honey

  • 100g raspberries (frozen or fresh)

  • 1/2 tsp cinnamon

Method:

1. Blend all ingredients (except raspberries) together until smooth then pour into two small ramekins/oven safe mini flan tins that have been greased.

2. Microwave raspberries till soft then blend them quickly or mash with a fork until smooth. Spoon a few small drops of the raspberry jam onto the top of each cheesecake, then swirl the raspberry purée through the cheesecake using the end of a knife or a tooth pick.

3. Bake for 20-25 mins at 160 degrees until lightly golden and firm around the edges (will be a bit wobbly in the centre).

4. Refrigerate for a few hours or overnight to set.
